Nutrition Highlights

  • Heart-Healthy Fats Enhance Nutrient Absorption: Avocado provides monounsaturated fats that support cardiovascular health. These healthy fats also help the body absorb fat-soluble nutrients, including beta-carotene and vitamin K, from the leafy greens and herbs.

  • Vitamin E: Avocado is a great source of Vitamin E, an antioxidant that supports skin health and protects cells from oxidative damage.

  • Iron & Energy Support: Spinach and parsley provide plant-based iron, an essential mineral that supports oxygen transport, energy metabolism, and red blood cell production.

  • Vitamin C & Iron Absorption: Lemon juice provides vitamin C, a powerful antioxidant that supports immune function, collagen production, and enhances the absorption of non-heme iron from spinach and parsley.

MindFuel Tips:

  1. Use any fresh herbs you like! The more variety, the better!

  2. To make a dairy-free version: Substitute coconut yogurt for Greek yogurt and omit the water, since coconut yogurt is not as thick.
