Meal Prep Pesto Egg Breakfast Sandwiches

Servings: 5 Time: 30-45 minutes

Nutrition Highlights:

  • High-quality Protein: Each sandwich provides 30 grams of protein to support muscle repair, recovery, and satiety.

  • Slow-Digesting Casein Protein: Cottage cheese is rich in casein, a slow-digesting protein that provides a sustained release of amino acids to support muscle maintenance and recovery.

  • Heart-Healthy Fats: Pesto provides unsaturated fats from olive oil and nuts, which support cardiovascular health and help with the absorption of fat-soluble vitamins.

  • Good Source of Iron (4mg): At 4mg per serving, one sandwich is providing approximately 25% of the daily value for iron, supporting oxygen transport, energy metabolism, and overall vitality.

Ingredients:

  • 5 ciabatta rolls, sliced in half

  • 1/3 cup pesto (1 Tbsp per sandwich)

  • 5 oz shredded mozzarella cheese (1 oz per sandwich)

  • 8 whole eggs

  • 1 cup low-fat cottage cheese

  • Pinch of salt and pepper

  • 1-2 cups arugula

Directions:

  1. Preheat oven to 375

  2. In a 9×9 (or medium sized) baking dish, whisk together the eggs, cottage cheese, salt, and pepper.

  3. Place the baking dish with the egg in the preheated oven and cook for 25-30 minutes or until the egg is fully cooked through. Remove from and oven and allow to cool for 10-15 minutes. Once cooled, slice the egg into 5 equal portions.

  4. To assemble each sandwich, spread about 1 Tbsp of pesto evenly between both halves of the bread, then add one portion of egg, 1 slice of cheese, and a small handful of arugula. If making as a meal prep, do not toast the bread or melt the cheese.

  5. Wrap each individual bagel sandwich in tinfoil and store in the refrigerator for 1 week, or freeze up to 3 months.

  6. Reheating instructions: I highly recommend reheating these sandwiches in the oven or airfyer; as both options will toast the bread nicely and prevent sogginess.

MindFuel Tips

  1. Cheese can often be high in sodium because it helps maintain freshness and extend the shelf life. If you are monitoring sodium intake due to health concerns, look for brands that have “no salt added” options - such as Friendship and Lucerne.

  2. Any type of bread will work great! Feel free to swap ciabatta for whole wheat varieties, which will boost the fiber content.
